  • ½ cup almond butter (or cashew)
  • ¼ cup cocoa powder
  • Some carob chips are optional

  • Grease a small cake pan and preheat your oven to 350°F
  • Melt the almond butter (or whichever you’re using) with maple syrup (on a stove or in a microwave)
  • Take a large bowl in which you’ll add mashed sweet potato, melted butter and syrup, as well as cocoa powder. Mix to combine
  • Fold in the chips if you’re using any
  • Pour the mixture into the cake pan and bake for 20min
  • Remove from the oven and let the brownies sit for a while before serving

Why is this recipe healthy?

Sweet potato is the main reason behind the “healthiness” of these brownies. Using sweet potato means that you’re not using any sugar, and the potato and maple syrup are the only sweeteners.

Sweet potato is also a great anti-inflammatory produce. It’s rich with anthocyanin, which gives it it’s color and makes it highly nutritious.

Vitamins contained in sweet potato are too many to count. There’s vitamins A and C, as well as B6, B2, B3, etc.

Minerals such as manganese, copper, potassium, and others are also present.
